Yay it’s Friday!, I’m a Hot Mess, Just Let Me Chat, Birthday Parties, Creamy Roasted Pepper & Tomato Soup

You have no idea how happy I am that it’s Friday!!!  This has been the week from hell. Ok…it could’ve been worse. But it was not a great week. Actually the past few weeks, I’ve felt like I’m running on fast forward. But you know what?  It’s OK!  You know why?  Apparently Mercury is in retrograde right now. Sooooo….it’s not ME!  Lol. I have an excuse!!  No wonder I’ve been a hot mess ?.  Bring on the Paleo Wine!!!

But seriously…hot mess doesn’t even describe it. If you follow me on FB and IG, you all may think I’ve got my shit together. But I don’t. Maybe sometimes, but it’s rare. I’m just like everyone else. I’m trying though!  I think this week I went to the grocery store at least 15 times. No joke. And we are talking about a person that typically goes ONCE!  Even with lists, I still kept forgetting things. The other day I went to the grocery store 3 times in one hour! Store, home…oops! Forgot something…back to the store…poop! I was supposed to double it…back to the store. It was so beyond frustrating. Never mind the fact that many times I went, they didn’t even have what I needed. Twice they said it would be in the next day. I’d go back to get it…not there. Let’s just say it was a bad luck week. And I’m very happy tomorrow is Friday. And although I’ve got a busy weekend ahead, it can’t get any worse. Or can it?  Apparently this retrograde stuff doesn’t end until the 22nd, so I’m holding my breath hoping the worst is behind me. Bracing myself.

So, onto other stuff. Today driving my almost 13 year old to dance, I said. “Emma…I get so much done when I don’t go to the gym”. Then she says, “Maybe you shouldn’t chat for an hour or two after class” ?. What is she, my mother?  Or my coach?  My coaches say the same thing. Stop chatting and get to work, they say. Well, I’m not going to stop chatting!  Never. That small window of time after class I get to sit and chat is my favorite, most relaxing part of my day. ?? When I leave the gym ?…no more sitting until bed. So…I will enjoy my chitter chatter and not feel guilty. Even if I don’t get anything done ?

Saturday is my daughters 13th birthday!  I still can’t believe I’m old enough to have a teenager. I don’t feel old. And I don’t act old. So, who cares. Anyways, she’s celebrating by having a group of friends sleep over and we’ve got some other fun plans going on. Some may wonder what I serve at birthday parties. Is it all Paleo food?  Hell no!!!  These are kids. It’s their birthday. They live it up!  They want what they want on their birthday. So, it’s pizza, cake, chips, pretzels, popcorn…I am doing a veggie and dip…lol.  And of course…candy!  Twizzlers are her favorite. Along with what we call Unicorn Bacon and marshmallows. They will be on a sugar high then probably stay up all night. Yay me! ?. But seriously…we eat healthy in our house. My kids aren’t perfect and I don’t expect them to be. And I don’t deprive them of treats. Find your balance and all is good in the world. I so wish I could tell you about her cake, but I can’t in case she reads this. It’s a surprise. So, I’ll tell you about it next week. Ohhhhh….I just had a great idea of what to post about next week! ?. I’ll be honest, though…I cringed at the site of my grocery cart yesterday. I felt like people were staring at it and I wanted to tell the people around me…”My cart never looks like this, I swear!!!” ?

Now…one more thing before I get to the food. Just an FYI if you’ve read the past few blog posts…I am 100% failing at shutting down life early. ?. There hasn’t been “no work after 8” or “no social media after 9”. It’s been more like…work until 10 and social media until 11 or 12 ?. Maybe next week???  Nope…probably never. But I’ll keep trying. Or at least say I’ll try. ?

A few weeks ago, I posted a soup on FB and IG and I promised I’d get the recipe up. I made in a big batch from all the fresh garden tomatoes out there right now. I batched them in single serving containers and threw them in my freezer. Perfect to have on hand this fall as it becomes cooler. Batch cooking is awesome. Now is the time to do it with all the fresh produce available!  This soup was tweaked from one of my favorite tomato soup recipes from Ina Garten. I added in a few more ingredients to change the flavor and make it nice and creamy. I hope you enjoy it!! ?

Creamy Roasted Pepper & Tomato Soup

Creamy Roasted Pepper & Tomato Soup
Instructions
  1. Pre-heat the oven to 400 degrees.
  2. In a large bowl, mix the tomatoes, peppers, 1/4 cup olive oil, salt and pepper.
  3. Line a rimmed baking sheet with foil, and spread the tomatoes and peppers on the pan.
  4. Bake for 45 minutes.
  5. In a large stockpot, add the 2 tbsp of olive oil and heat over medium heat.
  6. Add the onions, garlic, ghee, and red pepper flakes. Saute for about 10 minutes, until the onions start to brown.
  7. Add the canned tomatoes, basil, thyme, chicken stock and coconut milk.
  8. Then add the roasted tomatoes and peppers to the pot.
  9. Bring to a boil, then lower to simmer and simmer for about 45 minutes.
  10. Working in batches, process the soup through a food processor until smooth and creamy.
  11. Add more salt and pepper to taste, if needed.
  12. Enjoy!
