Grilled Chicken Skewers w/a Thai "Peanut" Sauce
Instructions
  1. Place all the sauce ingredients in a blender. Blend until smooth, scraping down the sides in between. Then set aside.
  2. Coat the chicken with the olive oil and sprinkle with salt and pepper to taste.
  3. Skewer the chicken tenders onto metal or wooden skewers. If using wooden, be sure to soak them for at least an hour before. Place 2 strips per skewer.
  4. Grill the chicken on medium heat for about 7 minutes on each side, until the chicken is cooked through.
  5. Remove from the grill. Drizzle the chicken with the “Peanut” Sauce and sprinkle with chopped cilantro. Serve extra sauce for dipping 🙂
