No more wisdom, Poop, & Grilled Chicken Skewers w/Thai “Peanut” Sauce

It’s Friday!!!!  It’s supposed to be Fun Friday, right?  Well…it’s kind of not today.  Actually, I don’t think it’ll be fun at all.  This morning, I’m heading in to get my 3 wisdom teeth removed (sigh).  This is NOT fun.  But…it needs to be done, so here I go.  Let’s look at the bright side.  I’ll be drugged up, forced to sleep, then will have to be waited on hand and foot the rest of the day.  It can’t be that bad, right?  We will see.  You know what’s even worse than getting your teeth pulled?  It’s getting your teeth pulled on your favorite day at Crossfit.  I hate that I am not spending my morning with my all my favorite Crossfit peeps.  I need my 9am crew!  I found this little funny below…..LOL!  I love Kermit.

Ok…moving on.  Last week, I talked about my daughters birthday cake and I couldn’t tell you what it was in case she read my post…I highly doubt she did.  If you follow me on IG and FB you’ve seen it.  But if you haven’t….here it is!

Yup….that would be a poop emoji cake!  My daughter is literally obsessed with poop emojis.  She nearly died when we presented her with this cake.  But…the obsession is my fault.  Because we’ve always been very open about talking about poop in my family.  And it’s gotten to the point where it’s a normal word in my house.  Like “Oh, POOP!”.  When the kids were little, I’d just yell the word POOP randomly to make them laugh…like in the middle of dinner.  My son always had poop issues as a toddler.  Oh man….long story short?  He used to stand on his head so he wouldn’t have to “go”.  No joke!  Always, we’ve always talked about the importance of pooping.  And now I find I spend a lot of time talking about poop with everyone.  It’s just what I do now.  Are you regular?  Do you poop every day?  Are you like clock-work?  You should be!  If you’re not…do something about it.  Get that shit out! (no pun intended ;))  And now that I think of it?  My husband, Scott, used to call me Poop when we were in college.  Maybe he started it?  I don’t know.  But please…if you’re not pooping regularly…you need to fix that.  Be able to be this person…

Remember last week when I talked about mercury retrograde and it completely screwing up my life?  Well…thank god yesterday was the last day!  Honestly…I don’t think I could take one more day.  It’s been one mess after another.  Nothing has gone right for weeks.  I’ve been a complete hot mess…everywhere in life!  And so many others have said the same thing.  Disaster after disaster.  Oh….and thank god it was over yesterday with my tooth surgery today.  Can you imagine that?  But you know what??? I survived it!  And I’m so ready to have this weekend behind me and start fresh on Monday.  Bring it on!

Ok…I’m getting right to the food now.  Starting next week when my life is back in order, I’ll be attempting to do 2 blog posts a week.  One similar to the ones you’ve been seeing on Friday and another with a recipe and more “food info”…not life info and silliness.  🙂  I didn’t get to do a ton of recipe testing this week, but I did get to try this one and it came out excellent!  I’ve always loved Peanut Sauce.  This sauce could be used for so many things, but it was fantastic on grilled chicken.  Pair it with some cauliflower rice and sautéed green beans and you’ve got yourself a yummy dinner.  I just served it with a green salad and that was just as good.  My hubby took leftover chicken for lunch the next day on top of a salad.  I hope you enjoy it and I hope you enjoy your weekend!

Grilled Chicken Skewers w/a Thai "Peanut" Sauce

Thai "Peanut" Sauce
Chicken Skewers
Grilled Chicken Skewers w/a Thai "Peanut" Sauce
Instructions
  1. Place all the sauce ingredients in a blender. Blend until smooth, scraping down the sides in between. Then set aside.
  2. Coat the chicken with the olive oil and sprinkle with salt and pepper to taste.
  3. Skewer the chicken tenders onto metal or wooden skewers. If using wooden, be sure to soak them for at least an hour before. Place 2 strips per skewer.
  4. Grill the chicken on medium heat for about 7 minutes on each side, until the chicken is cooked through.
  5. Remove from the grill. Drizzle the chicken with the "Peanut" Sauce and sprinkle with chopped cilantro. Serve extra sauce for dipping 🙂
  6. Enjoy!

    Yum, that sauce sounds seriously amazing! I need to get over my weirdness about “fish sauce” I’m sure you don’t really taste it and it adds to the overall flavor profile! Love your blog posts- glad to see more are coming! 😉

    Stephanie…So happy you’re loving the posts. Thank you! Fish sauce is weird…no doubt….LOL! But you are correct when you say it adds amazing flavor to recipes. My advice to anyone new with fish sauce…don’t smell it! ?
