I’m Sleeping, No Need to be so Angry, Christmas Tree Winnings, OOTW, & Stovetop Breakfast Crumble

Happy FriYAY!  Does anyone else feel like they are constantly playing “Beat the Clock”?  I feel like this everyday.  Life is so busy!  It’s all good stuff…don’t get me wrong.  But, an additional four hours a day would be awesome!  One thing I wanted to work on this month was finding 15-20 minutes a day of “Me” time.  Time with no work, time with no phone, no people.  Just quiet time with myself.  But, I can’t seem to find it!  Just when I think it might happen, something else comes up.  UGH!  I really need to figure this out, because I do think it would be very good for me.  Working on this for 2017!  But, you know what I’ve done really good this month?  7 hours of consistent sleep each night!  It REALLY makes a difference.  Of course, I’m not getting everything I need to get done during the day…which is why I need four more hours and am rushing all the time, but I do realize how important sleep is for me and my health.  I’ve been using that “Bedtime” option on my iphone.  I love it because when I’m lying in bed…on my phone, it pops up…time for bed if you want to get 7 hours!  And it pops up at 10:00, which is great because it’s my warning.  I take a little more time to scroll, then I put the phone down to get to sleep by 10:30.  Alarm goes off at 5:30 and I’m good to go.  My body does well on 7 h0urs of sleep.  Everyone is different so find your ideal amount and be consistent!  Try it out!


So, we had our first real snow this past Monday morning and holy moly!!!  I mean, ok people. I get the road conditions weren’t great….actually they were horrible. Buses were super delayed and had to pull over until the road was sanded. There was traffic and multiple accidents everywhere. It wasn’t an ideal or safe situation. Should there have been a delay?  Probably.  But there wasn’t even a drop of snow on the ground at 4:30am. I’m not sure anyone could have predicted that at 6:45 the roads would be a complete mess. No one could predict that once the snow hit the ground it immediately would turn into ice.  But yikes!….parents were ANGRY!!!  On Facebook, it was like election day all over again. So many people bitching and complaining about the school administrators and our town.  Yes, of course they could’ve cleared the roads better. But do we have to be so flipping angry about it?  People…this is life. No one perfect. I wasn’t happy either, but bitching and complaining all over facebook does what???  NOTHING, MY FRIENDS…NOTHING!  Be upset. Vent a little over text to your friends but it’s not necessary to make it known to the whole world how you think the town sucks and they need to do better.  Do you think they purposely endangered our children?  I could feel their blood boiling through their posts….it was starting to stress me out!  So what did I do?  I stopped reading them. I decided since the roads were bad, I’d take advantage, stay home all day and get shit done!  It was so quiet and peaceful. I got so much done.  No anger. I didn’t let a rough morning ruin my day. Move on….life is too short. The funny part is….if they did delay and the snow wasn’t that bad, these people would be bitching and complaining about that, too (sigh).


Moving on from my angry part of this post…want to hear something fun and exciting?  Last week, my kids sang at the Pelham Festival of Trees.  They are both in Select Chorus at the Middle School and I was pretty excited to see them up on stage together for the first time.  Well, when we got there, they were off with their friends looking at the trees.  Both came running up to me to buy raffle tickets because they HAD to win this certain tree for their Nana, who isn’t well right now.  They were right….when I saw it, it was perfect for her.  Beach themed and filled with anchors, buoys, starfish, lighthouses, lobsters and oars.  When I say perfect, I mean perfect.  So, we went for it.  We bought a bunch of tickets and hoped for the best.  You know where I’m going with this, don’t you…LOL!  Saturday night we were in the middle of cooking a big dinner (and drinking Paleo Wine) and my phone rang.  I answered and it was the festival committee.  I got sooo excited!  But, what did I win?  Not the tree…I won the door prize.  I didn’t even know there was a door prize…LOL!  But, I won it.  Still pretty cool, because I literally never win anything, but I still was hoping for that tree.  Oh well.  So, on we went with our evening and about a half hour later my phone rang again.  YUP!  Festival committee telling me we also won the tree!  We were all screaming with excitement!  We know how much their nana will love this tree, so we were pretty psyched.  We are heading to set it up with her tomorrow and the kids can’t wait for her to see it.  It’s crazy because as I said…I never win anything.  But, we won this….something for someone else who we know it will bring a big smile to.  And it was the kids idea to do it….not to get it for themselves, but for their nana who they love and adore.  Now that’s something special.


Ok, so I must admit.  I kind of slacked on my Outfit of the Week this week.  Oopsie!  Yesterday I went to the gym not to workout, but to work, and I was complimented on my outfit, so I went with it…Thank you Sandra for taking my pic!  LOL!  Sometimes you just want to be comfy!  But, you can be comfy at cute at the same time, right?  Of course you can!  No full Stitch Fix outfit this week, but I snuck it in there.  I had a good combo of Lululemon (leggings and sweater), JCrew (vest), Stitch Fix (scarf), and Uggs.  Comfort at it’s best!

Now onto food!  I love this recipe!  If you’re looking for an egg free breakfast, this Stovetop Berry Crumble is perfect.  It’s packed with tons of antioxidants from the berries and healthy fats from the nuts and coconut cream.  You can eat it with some bacon or sausage on the side if you want the protein, but I eat it as is.  Thursdays are my rest day, so it’s the day I go for the egg-free breakfast.  I eat eggs on gym mornings because first, I feel like eggs, kale and fruit fuel me for my workout.  And second, eggs don’t hurt my belly or make me feel sick when I workout.  I find when I make things like paleo pancakes or even a protein smoothie before I workout, I feel horrible.  So, I save those meals for non-gym days.  This crumble is super easy to put together.  It’s done on the stovetop in just a few minutes then put under the broiler for a few minutes to finish it off.  The only part that takes a little longer is the crumble topping, but that’s only because you have to actually take out a food processor.  You can make this topping ahead of time and store it in a zip lock baggie in the fridge.  Also, if you’re planning on making the coconut cream topping, be sure to put a can of full fat coconut milk in the fridge the night before!  What’s even better about this recipe?  It can double as a dessert!  The recipe can also easily be doubled and tripled, so make a bigger batch for a larger crowd if you wish.  Enjoy!  And let me know if you make it.  I’d love to hear 🙂

Stovetop Breakfast Crumble

Stovetop Breakfast Crumble
Berry Crumble
  1. Heat your oven on the broiler.
  2. In the small bowl of a food processor or mini prep, pulse the nuts, salt and spice just a few times to break up the nuts.
  3. Add the ghee or grassfed butter and pulse a few more times until it resembles a "crumble" topping. Don't over-process.
  4. Set the crumble aside.
  5. Remove the stem, then halve or quarter your strawberries. Add the strawberries, along with your other berries to a small non-stick saute pan.
  6. Heat the berries over medium low heat until they start to release some liquid and become slightly soft.
  7. Add the vanilla and cook for about another 30 seconds to a minute. The fruit should not get too soft and soggy.
  8. You can either leave the berries in your saute pan if it's oven proof or transfer the berries to a small over safe baking dish.
  9. Spread the crumble topping on top of the berries.
  10. Place the crumble under the broiler for about 3 minutes. Watch it closely so the nuts don't burn!
  11. Remove from the oven ad enjoy as is or add a spoonful of coconut cream on top!
Cocout Cream
  1. Place a can of full fat coconut milk in the fridge overnight.
  2. When you open the can, the "cream" will have risen to the top and hardened.
  3. Scoop out just the cream into a bowl (discard the water or use for smoothies).
  4. Whisk in the 1 tsp vanilla until it becomes creamy.
  5. Store in the fridge until ready to use.
