Wisdom Teeth & Coconut Vanilla Chia Seed Pudding

Happy Wednesday!  Who doesn’t love hump day?  So, I’m pretty excited I have time this week to blog twice.  But, I have to admit…it’s because I’ve been home a lot more due to my wisdom tooth removal…LOL!  Being stuck at home allows you to get so much done!  I’m healing…but it’s taking longer than I planned.  I guess I should have listed to the doctor when they told me I wouldn’t be working out for a week after.  I didn’t believe them.  I sometimes think I’m indestructible.  Surgery on Friday to me meant back to workouts on Monday.  NOPE!  I don’t think I’ll me making it at all this week.  Being a good girl and allowing myself to fully heal, so I can get back without any setbacks.  It’s sooooo hard!   This is the second surgery I’ve had within a year.  My last one was the day before Christmas Eve.  Never in a million years did I think having my wisdom teeth removed would be worse than having a lump removed from my boob!  YUP!  Way worse!  Maybe not emotionally….but the recovery has been way worse.  I actually hosted Christmas at my house 2 days after surgery and was totally fine!  Maybe a little tired…but find.  And in case you weren’t aware of my surgery last December….well…we can save that story for another blog post.  But, thank goodness all was OK 🙂

I’ve definitely been finding that it hurts to eat, so softer foods it’s been….and eating with my front teeth…that feels so odd.  Smoothies, smoothie bowls, scrambled eggs, apple sauce.  That’s been a lot of my diet these days.  But, what I did do was decide to make some of my favorite, very tasty snacks!  One was Grass-Fed Beef Gelatin Gummies.  That recipe will be coming later.  But, my other favorite is Coconut Vanilla Chia Seed Pudding.  This recipe is so beyond easy!  Takes 5 minutes to put together and you’re done….well, you have to let it sit overnight in the fridge, but actually making it only takes 5 minutes.  And there’s so many options for yummy toppings.  Make this and enjoy!

Coconut Vanilla Chia Seed Pudding
Instructions
  1. In a medium bowl, whisk all the ingredients together.
  2. Divide the pudding evenly among 4 small mason jars or ramekins.
  3. Let the pudding sit in the fridge overnight.
  4. Serve plain or with toppings of your choice.
  5. Enjoy!
