    Gluten-Free Eech

Hiiiii!!!!  It’s been so long since I posted a recipe on my blog.  Oopsie!  Instagram & Facebook have become so easy to use as a way to blog, that I quickly got away from posting here.  But I must say, I do miss writing.  The thing is, I share so much on my posts and Instagram stories, that I run out of stuff to write here!  But, I’m going to try more on subjects that are just too long for posts.  But most of all…to share recipes!!! This recipe I made right after Christmas when a friend of ours brought “the real thing” to Christmas Dinner.  I must admit, I…

I Still Need To Rest, Stop The E-Mail Madness, Intuitive Readings, Aerial Yoga, Crossfit Opens & Easy Greek Chicken w/Tzatziki

Happy Monday!  Yup…It’s school vacation and I’m three days late on this blog!  Actually, I wrote most of it on time, then ran out of time and didn’t get it out.   So, I’m thinking I may need to change the day I write and post my blog.  Why?  Well, I typically start writing on Thursday night, then finish off and post on Friday morning. But….end of the week is not only hectic, but on Thursday nights, I just want to sit and relax!  Remember I’ve talked about that sit relax thing I wanted to work on this year?  IT HASN’T HAPPENED YET!!!  So, I need to find the time. And…

Healthy Food Tastes Good, Advanced Allergy Therapeutics, It’s Good to Get Lost in a Hospital, OOTW, & Bacon Wrapped Garlic & Herb Meatloaf

Happy FriYAY!!!  We made it!  Another week down.  I had a pretty good week, actually.  I can’t complain.  Last weekend we had some friends over to watch the Patriots game.  It’s always a good evening when they win, but the company helps 😉  Since Scott and I were in the middle of a Shred10, we made sure we had plenty of compliant game foods.  Buffalo wings, my brother made brisket, ribs…it felt like a meat fest! LOL!  I also made veggies with homemade ranch dressing, paleo artichoke dip with carrots for dipping, shrimp, and a paleo coleslaw made with my homemade mayo.  I, of course, had some fruit for dessert.…

I Miss My Hunny, Advanced Allergy Therapeutics, OOTW, & Honey Lemon Chicken w/Asparagus

Happy Fridayyyyyyy!!!!  It’s been such a long week.  And now it’s SOOOOOOO COLD!  Brrrrrr….  It’s been a long week mostly because my hubby has been in London since Sunday 🙁  But…he’s coming home today and I can’t wait!  I miss him.  And it’s tough having him gone all week.  Even though he’s been traveling for like…ever…I still hate when he’s gone.  I don’t sleep well.  I fall asleep ok, but I can’t stay asleep.  I wake up almost every hour.  Unbroken sleep is the worst!  I mentioned last week that this month my goal was to get 7 hours of sleep each night.  Well, that kind of went downhill this…

Cutting the Tree, Taking Risks, OOTW, & Sticky Orange Maple Brussels

Happy FriYAY!!!!  It’s been such a busy week, so I’m super extra excited about it being Friday.  I’m not sure why, though.  I still have so much to do today.  And a busy day tomorrow.  Maybe some rest on Sunday?  Probably not.  I need to food prep Sunday.  Since last weekend was Thanksgiving weekend I did NO prep at all and it absolutely killed me this week!  Ugh…I hate when I don’t prep.  I was lost every night on dinner.  Luckily, I still stayed on track.  I had to.  My belly’s been off and I’m not sure why.  I thought originally it was from my Thanksgiving indulges.  I do think…

Happy Friday!!  Is everyone recovering from a fun day full of turkey and pie? ??  And maybe some cocktails? ??  I hope you all had a wonderful Thanksgiving with your families. I really enjoy this holiday and it’s my hubby’s favorite. Food, friends, family and fun. And of course…relaxation. We started our day off at CrossFit Free getting in a WOD with our amazing community. It’s always a blast working out with this crew and spending special days with them. Yesterday was a team WOD, which makes it even more fun. Especially when you’ve got an awesome partner and you laugh through the entire workout. ???‍.  Sometimes you just have…

    Crispy Smashed Potatoes

I LOVE potatoes…lots of different ways.  But, you can get bored of potatoes quickly.  I’ve been seeing so many recipes out there for smashed potatoes that I just had to try to come up with my own recipe and this was soooooo good!  A huge family favorite we will make very often.  What I love about making smashed potatoes is it doesn’t require a knife, or any slicing device.  My kids typically like “chips” vs. a regular baked potato or mashed, so it’s always more time consuming.  These are EASY!  Enjoy! It’s FRIYAY!!!!  I know…I’m always excited for Friday.  But there’s always a different reason for being excited for Fridays.  This week, I’m excited to see my hubby!  Yes…he’s traveled a lot this week and I feel like I haven’t seen him since last weekend, so I’m excited for some family time and relaxation.  Well…we don’t have too much relaxation time coming up, but at least we will be in the same house and we get to workout together today and tomorrow, which is always fun.  I’m excited to trash talk with him at the gym…LOL!  Want to talk about my week? Ok…. It had it’s ups and downs, like most…
